Lean and Green Appetizer | Shrimp Cucumber Bites

Ingredients
  

  • 21 oz cooked shrimp
  • 2 cups cucumber
  • 2 tsp olive oil

FOR THE SAUCE:

  • 1 tbsp Creole seasoning
  • 6 oz avocado
  • 1/2 cup green onions
  • 2 tbsp fresh cilantro optional
  • 2 tsp lemon juice
  • 1/4 tsp salt
  • 1/2 tsp cayenne pepper

Instructions
 

  • Toss the shrimp in the oil and the seasoning and cook in a preheated skillet (medium-high heat) until slightly blackened - 2-3 minutes per side. You could also use an air fryer for 5-6 minutes. (no need to flip)
  • While shrimp cooks, mix all sauce ingredients together to make the sauce. Slice cucumbers into quarter inch pieces peeling, if desired.
  • Assemble the bites, topping the cucumber slices avocado sauce, shrimp & remoulade sauce.
