Lean and Green Appetizer | Shrimp Cucumber Bites
- 21 oz cooked shrimp
- 2 cups cucumber
- 2 tsp olive oil
FOR THE SAUCE:
- 1 tbsp Creole seasoning
- 6 oz avocado
- 1/2 cup green onions
- 2 tbsp fresh cilantro optional
- 2 tsp lemon juice
- 1/4 tsp salt
- 1/2 tsp cayenne pepper
- Toss the shrimp in the oil and the seasoning and cook in a preheated skillet (medium-high heat) until slightly blackened – 2-3 minutes per side. You could also use an air fryer for 5-6 minutes. (no need to flip)
- While shrimp cooks, mix all sauce ingredients together to make the sauce. Slice cucumbers into quarter inch pieces peeling, if desired.
- Assemble the bites, topping the cucumber slices avocado sauce, shrimp & remoulade sauce.
