Lean & Green Brunch | Vegetable Quiche
- 1 cup egg beaters
- 1/2 cup mozzarella cheese- low moisture part skim
- 1 cup spinach
- 1/2 cup tomato, chopped
- 1/2 cup zucchini, chopped
- 2 wedges light swiss laughing cow cheese
- 2 tbsp onions, chopped optional
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/4 tsp onion powder
- Preheat oven to 375 F.
- Spray baking dish with cooking spray.
- Mix all ingredients together in a bowl. Pour mixture into prepared pan.
- Bake for 35 minutes.
