Lean & Green Brunch | Vegetable Quiche

Ingredients
  

  • 1 cup egg beaters
  • 1/2 cup mozzarella cheese- low moisture part skim
  • 1 cup spinach
  • 1/2 cup tomato, chopped
  • 1/2 cup zucchini, chopped
  • 2 wedges light swiss laughing cow cheese
  • 2 tbsp onions, chopped optional
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp onion powder

Instructions
 

  • Preheat oven to 375 F.
  • Spray baking dish with cooking spray.
  • Mix all ingredients together in a bowl. Pour mixture into prepared pan.
  • Bake for 35 minutes.

Notes

You could swap out the vegetables to your favorites, here’s a list of what you could customize to include – 1/2 cup = 1 green for all of these:
mushrooms, eggplant, cauliflower, peppers (red or green)
