The viral salmon cup sensation….but make it 5&1 plan approved!! This delicious Sushi Cup is Optavia 5&1 Compliant and so quick & easy to make! I used this salmon from Target but any will work.
Lean and Green Meal | Keto Salmon Sushi Cups
- 2 Tbsp light mayo
- 1 tsp hot sauce
- 1 tsp soy sauce
- 1 pack Its Skinny rice
- 6 oz salmon
- seaweed wraps
- Preheat oven to 350 F
- Layer seaweed on the bottom of the cups of your muffin tins. Scoop rice onto the seaweed.
- To the side, mix all sauce ingredients together in a bowl. Cut salmon up into cubes. Toss salmon into sauce until evenly coated. Place coated salmon on top of rice.
- Place muffin tin in oven and cook for 15 minutes.
